Cook the ground beef. In a large skillet over medium heat, add the ground beef and diced onion. Cook until the beef is browned and fully cooked, breaking it apart as it cooks. Drain any excess grease.
Make the cheeseburger filling. Add the Worcestershire sauce, yellow mustard, ketchup, diced dill pickles, garlic powder, salt, and black pepper to the cooked ground beef. Stir everything together, then add the shredded cheddar cheese and mix until the filling is combined and the cheese begins to melt. Remove from the heat.
Fill the egg rolls. Lay an egg roll wrapper on a clean surface with one corner pointing toward you. Add approximately 2 to 3 tablespoons of the cheeseburger filling near the bottom corner.
Roll and seal. Fold the bottom corner over the filling, tuck in both sides, and roll tightly toward the top corner. Dip your finger into a little water and moisten the final corner to seal the egg roll. Repeat with the remaining wrappers and filling. You should end up with approximately 12 egg rolls.
Air fry the egg rolls. Preheat your air fryer to 400°F if needed. Place the egg rolls in a single layer in the air fryer basket, leaving a little space between them. Air fry for 8 to 10 minutes, flipping halfway through, until golden and crispy. Cook in batches if necessary. No additional oil is needed!
Make the homemade special sauce. While the egg rolls cook, combine the mayonnaise, ketchup, yellow mustard, diced dill pickles, dill pickle juice, and garlic powder in a small bowl. Stir until everything is fully combined.
Serve and enjoy! Carefully remove the cheeseburger egg rolls from the air fryer and let them cool for a couple of minutes. Serve warm with the homemade special sauce for dipping. Cheers, bestie!
