Instructions

  1. Add the ground beef to a large pot or deep pan and season with salt and black pepper.
  2. Cook over medium-high heat, breaking up the meat as it cooks, until browned. If there is a lot of grease, drain most of it.
  3. Add the diced onion, stir, and cook for a few minutes until it starts to soften.
  4. Add the minced garlic and tomato paste, stir everything together, and cook for about 1 minute.
  5. Pour in the beef broth and water, then add the petite diced tomatoes and crushed tomatoes.
  6. Season with parsley, Italian seasoning, oregano, and basil, then stir everything together.
  7. Bring the soup to a boil, lower the heat, and let it simmer for 10 to 15 minutes.
  8. While the soup simmers, mix the mozzarella, ricotta, Parmesan, fresh parsley, salt, and black pepper in a bowl. Place it in the fridge until ready to serve.
  9. Break the lasagna noodles into pieces and add them directly into the soup. Stir well.
  10. Cook uncovered for 13 to 15 minutes, stirring occasionally so the noodles do not stick together. If the soup gets too thick, add a little more broth or water.
  11. Once the noodles are tender, remove the soup from the heat.
  12. Ladle the soup into bowls, add a scoop of the cheese mixture on top, and stir it in so it melts.
  13. Serve with garlic bread and enjoy.
