- 1 large Vidalia onion
- Water, for soaking
- 2 eggs
- 1 1/2 cups milk
- 2 cups flour
- Italian seasoning
- Garlic powder
- Cayenne pepper
- Thyme
- Paprika
- Onion powder
- Salt
- Black pepper
- Peanut oil, for frying
- Dipping sauce, for serving
Instructions
- Peel the onion, keeping the root intact.
- Trim a small amount off the root side, but do not remove it completely.
- Cut the onion into petals, being careful not to cut all the way through the root.
- Soak the onion in water for at least 30 minutes to help the petals open.
- In one bowl, whisk together eggs and milk.
- In another bowl, mix flour with Italian seasoning, garlic powder, cayenne, thyme, paprika, onion powder, salt, and pepper.
- Remove the onion from the water and let it drain.
- Gently spread the petals.
- Coat the onion in the seasoned flour, getting into all the petals.
- Dip the onion into the egg mixture.
- Coat again in the seasoned flour.
- Let the coated onion sit for 10 minutes.
- Heat peanut oil in a deep pot.
- Carefully fry the onion, top side down first if your pot is smaller.
- Fry until golden and crispy, flipping or turning carefully as needed.
- Drain and serve with dipping sauce.
