Mixed Berry Poke Cake with Cream Cheese Frosting

  1. Prepare the yellow cake mix according to the box using water, eggs, and oil.
  2. Grease two small baking pans with peanut oil or cooking spray.
  3. Divide the cake batter evenly between the pans.
  4. Bake or air fry until the cakes are fully cooked.
  5. Let the cakes cool.
  6. If desired, use a bowl as a guide to cut each cake into a circle.
  7. Trim one cake layer if needed so the layers stack evenly.
  8. Place the first cake layer on a plate or serving surface.
  9. Poke holes into the cake.
  10. Spoon mixed berry syrup over the cake, making sure some of it gets into the holes.
  11. In a bowl, mix the cream cheese frosting with softened cream cheese until smooth.
  12. Sprinkle walnuts over the syrup layer.
  13. Spread a layer of frosting over the walnuts.
  14. Add the second cake layer on top.
  15. Frost the top and sides with the remaining frosting.
  16. Pour more mixed berry syrup over the top so it drips down the sides.
  17. Crush more walnuts and sprinkle them over the top.
  18. Slice and serve.
