- Season the beef stew meat with garlic powder, salt, and black pepper.
- Add the beef to the pressure cooker.
- Sauté for about 2 to 3 minutes, just until the outside of the beef starts to brown. It does not need to be fully cooked.
- Remove the beef and set it aside in a bowl.
- Add the remaining 1 tablespoon of butter to the pressure cooker.
- Add the diced onion. If using mushrooms, add them here too.
- Cook for about 4 minutes, stirring occasionally.
- Add the minced garlic and cook for about 30 seconds.
- Pour in the beef broth.
- Scrape the bottom of the pressure cooker to loosen any browned bits.
- Add the Worcestershire sauce and Dijon mustard.
- Add the beef back into the pressure cooker.
- Stir everything together.
- Place the lid on the pressure cooker.
- Pressure cook on high for 25 minutes.
- Let it naturally release for 10 minutes, then release the remaining pressure according to your pressure cooker’s instructions.
- While the beef cooks, make the egg noodles according to the package directions.
- In a small bowl, mix the water and cornstarch until smooth.
- Remove the pressure cooker lid and turn sauté back on.
- Slowly stir the cornstarch slurry into the beef mixture.
- Cook for about 2 minutes, stirring, until the sauce thickens.
- Turn off sauté.
- Stir in the sour cream.
- Let it sit for about 2 minutes so everything gets creamy.
- Add the cooked egg noodles directly into the stroganoff, or keep them separate and serve the beef mixture over the noodles.
- Top with extra sour cream and parsley if desired.
- Serve warm and enjoy.
