Ingredients
- About 4 lb pork shoulder, cut into 3-inch pieces
- Olive oil
- Salt
- Black pepper
- 1 jar Cholula Cochinita Pibil sauce
- A little water, to rinse out the jar
- Cooked white rice
- Onion, for topping
- Avocado, for topping
- Cheese, for topping
- Cilantro, for topping
- Optional white rice:
- 1 cup white rice
- 2 cups water
- Olive oil
- Salt
Instructions
- Cut the pork shoulder into about 3-inch pieces.
- Add olive oil to the pressure cooker and turn on sauté.
- Season the pork with salt and pepper.
- Brown the pork pieces for a few minutes on the outside.
- Turn sauté off.
- Pour in the whole jar of Cochinita Pibil sauce.
- Add a little water to the jar, shake/rinse it, and pour that in too.
- Stir everything so the pork is coated and nothing is stuck to the bottom.
- Put the lid on and pressure cook on high for 1 hour.
- Release the pressure.
- Open the lid and shred the pork.
- Serve over white rice.
- Top with onion, avocado, cheese, and cilantro.
