  1. Cut the pork shoulder into about 3-inch pieces.
  2. Add olive oil to the pressure cooker and turn on sauté.
  3. Season the pork with salt and pepper.
  4. Brown the pork pieces for a few minutes on the outside.
  5. Turn sauté off.
  6. Pour in the whole jar of Cochinita Pibil sauce.
  7. Add a little water to the jar, shake/rinse it, and pour that in too.
  8. Stir everything so the pork is coated and nothing is stuck to the bottom.
  9. Put the lid on and pressure cook on high for 1 hour.
  10. Release the pressure.
  11. Open the lid and shred the pork.
  12. Serve over white rice.
  13. Top with onion, avocado, cheese, and cilantro.
