- For the Homemade Country Gravy

- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Optional Sides
- Mashed potatoes

Instructions
- Prepare the chicken. Slice the chicken breasts in half lengthwise to create 4 thinner cutlets. Place them between pieces of parchment paper and gently pound them with a meat tenderizer or another sturdy kitchen tool until they’re an even thickness.
- Prepare the breading. In one bowl, combine 1 1/2 cups flour, garlic powder, paprika, onion powder, salt, and black pepper. In another bowl, whisk together the eggs and buttermilk until combined.
- Coat the chicken. Dip each chicken cutlet into the seasoned flour, then into the egg and buttermilk mixture, and finally back into the flour. Make sure each piece is completely coated, then set aside on parchment paper until you’re ready to fry.
- Fry the chicken. Heat approximately 1/2 cup olive oil in a large skillet over medium heat, using enough to generously coat the bottom of the pan. Add the chicken in batches and fry for about 3–5 minutes per side, until golden brown, crispy, and cooked to an internal temperature of 165°F. Transfer to a paper towel-lined plate or wire rack.
- Make the country gravy. While the chicken cooks, melt 3 tablespoons butter in a separate skillet over medium heat. Add 3 tablespoons flour and whisk together for about 1–2 minutes to cook out the raw flour taste.
- Add the milk and seasonings. Slowly whisk in 2 cups milk until smooth. Add the black pepper, salt, garlic powder, and onion powder. Continue whisking and bring the gravy to a gentle simmer until it thickens, approximately 3–5 minutes.
- Assemble your plate. Place the crispy country fried chicken onto a plate with mashed potatoes and green beans, or your favorite sides. Spoon a generous amount of homemade country gravy over the chicken and mashed potatoes.
- Serve and enjoy! Grab a fork, get a little chicken, mashed potatoes, and gravy in one bite, and enjoy. Cheers, bestie!
